Broccoli and Sausage Soup

Soup is good for the soul, and this recipe is flavorful and hearty, but not heavy. The sweet Italian sausage gives it just the right ‘zing’ and broccoli is packed with vitamin C and fiber. Served with crusty bread, it’s a meal that will keep you fueled in cold weather.

1 ¼ pounds Sweet Italian sausage
1 Onion, chopped
1 head Broccoli, chopped
8 c. Chicken broth
2 (15-oz.) cans Cannellini beans, rinsed
Salt and pepper

  1. In a large saucepan, cook the sausage, breaking it up, over medium high heat until browned, about 10 minutes. Transfer to a paper-lined plate.
  2. Discard all but 1 T. fat from the pan.
  3. Add the onion to the pan and cook until softened, about 3 minutes.
  4. Stir in the broccoli and chicken broth and bring to a simmer; cook for 3 minutes.
  5. Stir in the sausage and beans and cook until heated through, about 2 minutes.
  6. Season with salt and pepper. Serve with bread and fruit.
