Fettucine with Green Beans

Pasta and fresh vegetables – always a great combination. The hearty whole grain pasta really enhances this dish – just be sure to cook it slightly past al dente. Sliced apples make a colorful side dish and round out the meal.

Time: 30 minutes
Servings: 4


¼ c. Olive oil
1 pound Fettuccine
1 pound Green beans, ends trimmed and cut into 1 inch pieces
1 Onion – sliced into thin wedges
4 Garlic cloves – minced
1 t. Crushed red pepper

4 Bread sticks

2 Apples

  1. Put pot of water with 1 t. salt on to boil.  Heat oven to 375.
  2. In large skillet, cook onion and garlic in ¼ olive oil over medium heat until tender, about 5 minutes (watch for burning).
  3. Add fettuccine to boiling water – cook until tender, about 10 minutes.
  4. Add green beans and ¼ c. pasta water to onion and garlic, cover and cook until tender, but not mushy, about 5 more minutes.  Season with salt and pepper to taste and add crushed red pepper.
  5. Place breadsticks on cookie sheet and place in over for 4 minutes.
  6. Drain fettuccine and toss with green bean mixture.
  7. Slice apple.
  8. Dish up!
