Parmesan-crusted Tilapia

Fish is fantastic - Tilapia is a mild whitefish that is very versatile.  The paprika and parmesan in this recipe makes for great color and flavor.

Time:  30 minutes
Recipe (serves 4):

3/4 c. grated parmesan cheese
2 t. paprika
1/4 t. garlic salt
1 t. dried parsley
1/2 t. black pepper
1 T. olive oil
1 pound tilapia fillets
1 lemon, cut into wedges

  1. Preheat oven to 400 degrees.
  2. Place rice, water, salt in a saucepan, bring to a boil.  Reduce heat, cover and simmer on low for 12 minutes.
  3. In a shallow dish, combine cheese, paprika, garlic salt parsley and black pepper.  Drizzle fillets in olive oil and dredge in the cheese mixture.
  4. Place on a foil-lined baking sheet and bake until the fish is opaque in the thickest part - about 12 minutes.
  5. While fish is baking and rice is cooking, slice broccoli into bite-sized pieces.  Steam in microwave for 4 minutes with 1/4 c. water.
  6. Serve fish with lemon wedges, rice, broccoli and fruit.
