Rhubarb Surprise Pie

This is a delicious recipe that makes a great non-traditional pie. It is quick and simple and received high marks from all tasters.  My dad is not terribly fond of rhubarb, and even he liked this one!

Back to Desserts
Sift together:
1 c. flour
1 t. baking powder
½ t. salt
Cut in 2 T. butter

Add:
1 beaten egg
2 T milk
Mix and press into a greased 9” pie plate.

Arrange 3 c. diced rhubarb in pie shell, sprinkle with 1 package (3 oz.) strawberry Jello. (I used cherry for one pie, and it was delicious, too.)

Topping:
½ c. flour
1 c. sugar
½ t. cinnamon
¼ c. melted butter
Mix to crumble and sprinkle on top of pie.

Bake at 350 degrees for 50 minutes.
