Sesame Soy Meatballs

With a hint of Asian flavors, this tasty entrée satisfies the meat lovers in your house. Kids will love it, too; my 5-year old commented how good it smelled while I was cooking and ate every last bite!

Time: 40 minutes
Servings: 4


1/3 c. Green onions, thinly sliced
2 T. Brown sugar
3 T. Soy sauce, low-sodium
2 T. Dark sesame oil
1 T. Chili paste
6 Garlic cloves, finely minced
1 pound Ground beef
Cooking spray
1 c. Brown rice
2¼ c. Water
1 t. Butter

  1. Place 1 c. rice, 1 t. butter and 2 ¼ c. water in saucepan on high; turn down to low once it comes to a boil. Simmer for 35 minutes.
  2. Preheat oven to 400 degrees.
  3. Combine first 7 ingredients of meatballs in large bowl, stir until blended. Add beef and mix gently to combine. With moist hands, shape into 1 ½ inch meatballs (~20).
  4. Heat a pan over medium high heat. Add half of meatballs, cook for 4 minutes, rolling to brown all sides; transfer to rimmed baking sheet coated in cooking spray. Repeat with second batch. Bake in oven for 7 minutes.
  5. Steam vegetables for 6-8 minutes on stove OR 2 minutes in microwave.
  6. Slice fruit into desired shape.  Dish up!
