Whitefish and Chorizo Stew

This hearty seafood stew enjoys a little spice from the chorizo sausage. Extremely quick and convenient!

Time: 30 minutes
Servings: 4


1 t. Olive oil
2 oz. Chorizo sausage, diced
1 c. Chopped onion
3 Garlic cloves, sliced
½ c. Dry sherry
½ c. Chicken broth
2 t. Dried parsley
¼ t. Salt
¼ t. Black pepper

1 3/4 # Tomatoes, diced
15 oz. Canned garbanzo or cannellini beans, rinsed and drained
20 oz. Whitefish filets (halibut or cod)

  1. Heat a deep skillet over medium heat.  Add 1 t. oil to pan, followed by chorizo.  Sauté 3 minutes.
  2. Add onion and sauté 3 minutes.  Add sliced garlic and sauté 1 minute.
  3. Add sherry, cook 2 minutes scraping up any brown bits in pan.
  4. Add broth and next 5 ingredients (through beans); stir to combine.
  5. Nestle fillets in stew, spooning tomato mixture over fillets.  Cover and simmer 6 minutes.
  6. Serve with bread and fruit.
